  • 2 ripe peaches
  • 4 tablespoons unsalted butter
  • 1/2 cup dark brown sugar
  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 cup plain Greek yogurt
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup milk of choice (room temperature)
  • 3 tablespoons olive oil (canola or melted coconut oil)
  • 1/2 cup diced peaches

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan.
  2. In one bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, combine the Greek yogurt, granulated sugar, eggs, milk, olive oil, and vanilla extract until smooth.
  4. Melt unsalted butter with dark brown sugar and ground cinnamon in a saucepan over medium-low heat to create caramel.
  5. Pour the caramel into the prepared pan and layer sliced peaches on top.
  6. Fold wet ingredients into dry ingredients gently; then add diced peaches.
  7. Pour batter over peaches and bake for 35-40 minutes or until cooked through.
  8. Cool in the pan for about 10 minutes before serving.
