  • 1 cup granulated sugar

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 cups mashed ripe bananas (about 4 bananas)
  • For the cinnamon sugar swirl: 3 tablespoons melted butter, 3 tablespoons granulated sugar, 3 tablespoons dark brown sugar, 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×5-inch loaf pan.
  2. In a large bowl, combine melted butter and sugar until well mixed. Add eggs and vanilla; blend until smooth. Stir in flour and baking soda just until combined, then gently fold in mashed bananas.
  3. In a separate small bowl, mix cinnamon sugar swirl ingredients until thickened (add extra melted butter if necessary).
  4. Layer about 1/4 of the batter in the prepared pan, dollop with 1/4 of the cinnamon mixture, and swirl gently. Repeat layering with remaining batter and cinnamon mixture.
  5. Bake for 60-70 minutes until golden brown; check doneness with a toothpick.
  6. Cool in the pan for at least 30 minutes before transferring to a wire rack.
