  • 1.5 lbs small potatoes (gold, red-skinned, or a mix)
  • 1 tbsp salt
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon Mustard
  • 1 tbsp Grainy Mustard
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • 4 tbsp fresh dill, chopped
  • 1 shallot, peeled and diced
  • 56 cornichons (or dill pickles), diced
  • 1 tbsp cornichon juice

Instructions

  1. Cook the Potatoes: Halve or quarter the small potatoes. Boil them in salted water until tender (about 15 minutes), then drain and rinse under cold water.
  2. Prepare the Vinaigrette: In a mixing bowl, whisk together olive oil, vinegar, salt, pepper, both mustards, dill, shallots, diced cornichons, and cornichon juice.
  3. Combine: Add warm potatoes to the vinaigrette and toss gently until coated.
  4. Serve: Enjoy immediately or chill before serving. Garnish with extra dill if desired.
