  • 1 cup diced onion
  • ¾ cup bread crumbs
  • ⅓ cup broth or water
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine lean ground beef, diced onion, bread crumbs, broth (or water), eggs, garlic powder, onion powder, salt, pepper, and tomato paste. Mix until just combined.
  3. Shape the mixture into a loaf or pack it into a greased loaf pan before placing it on the baking sheet.
  4. Bake uncovered for 40 minutes.
  5. While baking, mix ketchup and white vinegar in a bowl. After the first bake time, spread this mixture over the meatloaf and bake for an additional 10 minutes.
  6. Let the meatloaf rest for about 10 minutes before slicing and serving.
