  • 2.5 lbs beef chuck or stew meat
  • 2 Tbsp coconut oil (or vegetable oil)
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated
  • 2 Tbsp red curry paste (or curry powder)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth (or stock)
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey

Instructions

  1. Gather and prepare all ingredients by cutting the beef into chunks and slicing the onion.
  2. In a large pot, heat coconut oil over medium heat. Sauté onions until soft, then add garlic and ginger for an additional minute.
  3. Stir in red curry paste, cumin, turmeric, cinnamon, and optional chili flakes until well combined.
  4. Add beef chunks and brown on all sides for about 5 minutes.
  5. Pour in coconut milk and beef broth; mix in tomato paste and brown sugar (or honey).
  6. Simmer gently covered on low heat for about 2 hours until the beef is tender.
  7. Serve hot over jasmine rice or with naan.
