  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1 1/2 cups corn (fresh or thawed frozen)
  • 1 1/2 cups cherry tomatoes (halved)
  • 1/2 cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 1/3 cup crumbled feta cheese
  • Optional: 2 tablespoons Italian dressing

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt to create the dressing.
  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the corn and cook for about 5–7 minutes until tender.
  3. Transfer cooked corn to a large bowl and let it cool slightly. Add cherry tomatoes, cucumber, and minced basil; mix well.
  4. Chill in the refrigerator until ready to serve. Just before serving, drizzle with the dressing and top with feta cheese if desired.
