  • 4 cups shredded cabbage
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 15 oz can tomato sauce
  • 1 cup uncooked white rice
  • 2 cups low-sodium vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic. Shred the cabbage if not pre-packaged.
  2. In a large skillet over medium heat, add a splash of oil and sauté the onions until translucent. Add minced garlic and stir for about one minute until fragrant.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  4. Stir in shredded cabbage, uncooked rice, tomato sauce, vegetable broth, salt, pepper, paprika, and Italian seasoning. Mix well.
  5. Bring to a boil then reduce heat to low. Cover and let simmer for about 20-25 minutes until rice is cooked through and cabbage is tender.
  6. Give it a final stir before serving. Garnish with fresh parsley if desired.
