  • 2 cups fresh spinach

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat, then cook the chicken until browned on both sides (about 5–7 minutes each). Remove from skillet.
  2. In the same skillet, sauté onions until translucent (about 3 minutes), then add garlic and mushrooms; cook until mushrooms are tender (approximately 5 minutes).
  3. Return chicken to the skillet and deglaze with broth. Reduce heat to medium-low, stir in cream or plant-based alternative to create a creamy sauce.
  4. Add spinach and stir until wilted (about 2–3 minutes). Adjust seasoning before serving.
