  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 12 oz rotini or fusilli pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Cook the rotini or fusilli in a large pot of salted boiling water for about 8-10 minutes until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sear until golden brown and cooked through (about 8-10 minutes). Remove from skillet.
  3. In the same skillet, melt additional butter over medium heat; add minced garlic and cook until fragrant (about 1 minute). Stir in heavy cream and milk, bringing to a gentle simmer.
  4. Add Velveeta cheese, stirring until melted. Then incorporate cheddar, mozzarella, and Parmesan cheeses until smooth and creamy. Adjust thickness with reserved pasta water if needed.
  5. Combine cooked pasta with the cheese sauce until well coated. Serve topped with seared chicken and garnish if desired.
