  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the rotini in salted boiling water until al dente (9-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add the chicken seasoned with Cajun seasoning and cook until golden brown (7-9 minutes). Remove and keep warm.

  5. Mix in mozzarella and Parmesan cheese until smooth. Toss cooked rotini into the sauce, adding reserved pasta water as needed for desired consistency.
