  • 1 cup gluten-free panko breadcrumbs
  • 1/2 cup Parmesan cheese (or nutritional yeast for vegan)
  • 2 large eggs
  • 1/4 cup all-purpose flour (or almond flour for keto)
  • Olive oil spray
  • 1/2 cup mayonnaise
  • 2 cloves minced garlic
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix panko breadcrumbs with Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  3. Set up three bowls: one with beaten eggs, one with flour or almond flour, and the third with the breadcrumb mixture.
  4. Coat each drained artichoke heart in flour, then egg, and finally in the breadcrumb mixture.
  5. Place on the baking sheet in a single layer and lightly spray with olive oil.
  6. Bake for about 25 minutes until golden brown.
  7. For the aioli, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper in a bowl.
