  • 1 (16 ounce) can chickpeas
  • 3 tablespoons plain yogurt
  • 3 tablespoons salted butter
  • 4 tablespoons extra virgin olive oil
  • 24 cloves garlic, thinly sliced or smashed
  • 2 shallots, thinly sliced
  • 1 teaspoon ground turmeric
  • 1 teaspoon smoked paprika
  • 1 pinch crushed red pepper flakes
  • 2 tablespoons raw sesame seeds
  • 2 cups roughly torn greens, such as kale, chard, or spinach
  • 1/2 cup fresh mint or cilantro

Instructions

  1. Rinse rice until clear; boil in salted water for 6-8 minutes until al dente. Drain and rinse.
  2. Mix cooked rice with yogurt in a bowl.
  3. In a skillet, melt butter and oil; add yogurt-coated rice and create holes for steam. Cook until crispy.
  4. In another skillet, heat olive oil; add chickpeas and spices. Sauté until crispy; toss in greens.
