  • 4 boneless, skinless chicken breasts
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Spray the inside of the crock pot with non-stick cooking spray and place chicken breasts at the bottom.
  2. Season the chicken with garlic powder, thyme, salt, and pepper.
  3. In a bowl, mix cream of chicken soup, sour cream, and chicken broth until well combined.
  4. Spread the mixture over the seasoned chicken and top with frozen vegetables.
  5. Sprinkle stuffing mix over the veggies and gently press down.
  6. Cover and cook on low for 6 hours or until chicken is cooked through and stuffing is tender.
