  • 1 dry ranch dressing packet
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 1 can (15 oz) whole kernel corn
  • 1 can (15 oz) black beans
  • 8 oz block of cream cheese
  • Juice of 2 limes
  • ½ cup chicken broth

Instructions

  1. Place chicken breasts in the Crock Pot and add drained black beans, corn, Rotel tomatoes, onion powder, ranch seasoning, and black pepper.
  2. Squeeze fresh lime juice over the mixture and pour in the chicken broth. Top with cream cheese.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours until chicken reaches an internal temperature of 165°F.
  4. Shred chicken using two forks and stir everything together until well combined.
