  • Juice of 2 oranges
  • Juice of 2 limes
  • 1 can black beans
  • 2 ripe plantains
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • ½ tsp oregano
  • ¼ tsp smoked paprika
  • Salt & pepper to taste
  • Olive oil spray
  • 2 cups cooked white rice or mixed greens
  • Fresh cilantro
  • Lime wedges

Instructions

  1. Marinate the beef: Combine citrus juices, olive oil, minced garlic, cumin, oregano, salt, and pepper in a bowl. Add sliced beef and let it marinate for at least 30 minutes.
  2. Cook the beef: Heat a skillet over medium-high heat and sear the marinated beef for about 4–5 minutes until browned.
  3. Prepare the black beans: Warm rinsed black beans in a small pan with olive oil, cumin, smoked paprika, and salt for 5–7 minutes.
  4. Cook the plantains: Preheat an air fryer to 375°F (190°C). Spray sliced plantains lightly with olive oil and cook for about 10–12 minutes until golden brown.
