  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1 cup cold whole milk
  • 1 cup unsalted butter (for dough)
  • 8 ounces high-quality chocolate batons or semi-sweet chocolate
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Confectioners' sugar (for dusting)

Instructions

  1. Prepare the Dough: Mix flour, sugar, salt, and yeast in a bowl. Gradually add cold milk while stirring until a rough dough forms. Knead lightly until smooth; cover and let rise in a warm place until doubled.
  2. Prepare the Butter Layer: Place cold butter between parchment paper and roll into a rectangle about ½ inch thick. Chill in the fridge.
  3. Roll Out Dough: Roll out risen dough into a rectangle twice the size of the butter layer. Place chilled butter in the center.
  4. Enclose Butter Layer: Fold dough over butter to enclose it completely. Roll out gently and fold into thirds like a letter. Wrap and chill for at least 30 minutes.
  5. Shape Croissants: Roll out again into a larger rectangle, cut into triangles, place chocolate at wide end, and roll tightly.
  6. Final Rise & Bake: Let shaped croissants rise until doubled on lined baking sheets. Brush with egg wash before baking at 375°F for about 20 minutes or until golden brown.
