Instructions

  1. In a saucepan, combine sugar, salt, and the zest from 4 oranges, whisking until it resembles wet sand.
  2. Add egg yolks and mix in freshly squeezed orange juice along with lemon juice; whisk until smooth.
  3. Cook over low-medium heat while continuously whisking for about 10-15 minutes until thickened.
  4. Once thickened, stir in a small sprig of rosemary for flavor infusion.
  5. Strain the mixture through a fine-mesh sieve into a bowl with sliced butter; whisk until fully melted.
  6. Cover directly with cling wrap and refrigerate for at least an hour before serving.
