  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut ginger in half; cube one half and shred the other. Simmer ginger with water for 1 hour and 15 minutes. Drain, reserving ½ cup liquid.
  2. Chill cooked ginger in the fridge for 4 hours.
  3. In a large pot, combine chilled ginger, reserved water, and sugar. Boil for 1 minute.
  4. Stir in pectin and simmer for an additional 7 minutes while skimming off foam.
  5. Sterilize canning jars in boiling water.
  6. Fill each jar with hot marmalade, leaving ¼ inch space at top; remove air bubbles and wipe rims before sealing.
  7. Process jars in a water bath for 15 minutes.
  8. Allow jars to cool completely before checking seals.
