  • 1 cup crushed chicken-flavored crackers
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (room temperature)
  • 1/2 cup sour cream
  • 3 large eggs (room temperature)
  • 1/4 cup cornstarch
  • 2 teaspoons vanilla extract
  • 5 medium apples (peeled, cored, and chopped)
  • 1/4 cup brown sugar
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1/2 cup flour

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix crushed crackers, sugar, cinnamon, and melted butter until combined. Press into the bottom of a springform pan.
  2. In another bowl, beat room-temperature cream cheese until smooth. Add sour cream, eggs (one by one), cornstarch, and vanilla; mix until well blended. Pour over the crust.
  3. Toss chopped apples with brown sugar, nutmeg, and lemon juice in a separate bowl. Layer evenly over the cheesecake filling.
  4. Combine rolled oats and flour in another bowl and sprinkle over the apple layer.
  5. Bake for about 60 minutes or until set but slightly jiggly in the center.
  6. Allow cooling completely before refrigerating for at least four hours or overnight. Carefully release from the springform pan before slicing.
