Ingredients

Scale
  • 0.25 cup unsalted butter (for mixing)
  • 4 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 2 teaspoons salt
  • 1 tablespoon active dry or instant yeast
  • 1.5 cups cold whole milk
  • 1.5 cups unsalted butter (softened for layering)
  • 4 ounces semi-sweet or bittersweet chocolate

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Melt the butter and mix with cold milk; add to dry ingredients and form a soft dough.
  2. Shape into a ball, wrap in plastic wrap, and refrigerate for at least 6 hours or overnight.
  3. Prepare the butter layer by mixing softened butter with flour until smooth.
  4. Roll out the dough into a rectangle and spread the butter layer on two-thirds of it.
  5. Fold the unbuttered third over the middle section, then fold over the remaining third to create layers; roll out again gently.
  6. Cut triangles from the dough, place chocolate pieces at the base of each triangle, and roll tightly.
  7. Let shaped croissants rise for about 30 minutes on lined baking sheets.
  8. Preheat oven to 375°F (190°C). Brush with egg wash and bake for about 20 minutes or until golden brown.
