  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, diced
  • 2 celery ribs, chopped
  • Fresh chives and paprika for garnish

Instructions

  1. Cook macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Halve the hard-boiled eggs; scoop yolks into a small bowl and chop egg whites.
  3. Mash yolks and mix with Greek yogurt, mayonnaise, and Dijon mustard until smooth.
  4. In a mixing bowl with macaroni, combine chopped egg whites, diced onion, celery, and egg yolk dressing. Stir well.
  5. Season with sea salt, top with chives and paprika, then chill for at least an hour before serving.
