  • 4 pieces uncooked  Turkey Bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, stemmed, seeded and diced
  • 4 garlic cloves, minced
  • 12 ounces dark Mexican beef broth
  • 4 cans (15-ounce) pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • 1 tablespoon fresh lime juice
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook  Turkey Bacon in a large sauté pan over medium-high heat until crispy. Remove with a slotted spoon and set aside.
  2. In the same pan, sauté onion and jalapeno in reserved grease for about 5 minutes until soft. Add garlic and sauté for another minute.
  3. Stir in beef broth, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer.
  4. Reduce heat to medium-low and simmer uncovered for about 15 minutes.
  5. Stir in cooked  Turkey Bacon and lime juice before serving. Garnish with fresh cilantro.
