  • 20 regular sized vegan marshmallows
  • 1 tbsp butter
  • 5 cups popped popcorn
  • Hot pink candy melts
  • 1 tsp vegetable shortening or coconut oil
  • Easter themed sprinkles
  • Easter themed icing decorations

Instructions

  1. In a microwave-safe bowl, melt the butter.
  2. Add vegan marshmallows to the melted butter and mix until coated.
  3. Microwave the mixture at 30-second intervals, stirring until it’s smooth.
  4. Place popped popcorn in a greased 9×9 baking dish.
  5. Pour the melted marshmallow mixture over popcorn and stir to coat evenly.
  6. Press the mixture flat into the dish.
  7. Melt hot pink candy melts with vegetable shortening in a separate bowl.
  8. Drizzle the melted candy over the popcorn bars.
  9. Add sprinkles and press icing decorations on top.
  10. Chill in the fridge for at least 30 minutes before cutting into squares.
