  • 15.25 ounce white cake mix
  • 3 egg whites
  • ½ cup vegetable oil
  • ½ cup greek yogurt
  • ¾ cup whole milk
  • pink, yellow, and blue gel food coloring
  • 5.1 ounces instant vanilla pudding mix
  • 2 ¾ cups whole milk
  • 2 cups heavy cream
  • 3 Tablespoons granulated sugar
  • 1 cup sweetened shredded coconut
  • Easter sprinkles and/or candy (optional topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, mix white cake mix, egg whites, vegetable oil, Greek yogurt, and whole milk until smooth.
  2. Divide batter into three bowls; color each with gel food coloring (pink, yellow, blue).
  3. Pour colored batter into a 9×13 inch baking pan in alternating dollops. Bake for 25 minutes or until a toothpick comes out clean. Cool completely.
  4. Whisk together instant vanilla pudding mix and whole milk until thickened.
  5. Poke holes in the cooled cake with a fork and pour pudding over it.
  6. Whip heavy cream with sugar until stiff peaks form; spread over pudding. Top with shredded coconut and optional sprinkles.
