  • 500g beef mince
  • 4 large tortillas
  • 1 onion (chopped)
  • 250g microwave rice pouch (Mexican-flavored)
  • 200g fresh salsa
  • 400g black beans (drained and rinsed)
  • Grated mozzarella cheese

Instructions

  1. Heat sunflower oil in a skillet over medium heat. Add beef mince and brown for about 5 minutes.
  2. Stir in chopped onion, mild chili powder, sweet smoked paprika, ground cumin, and dark brown sugar. Cook for another 5 minutes until the onion softens.
  3. Add tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Simmer covered for about 15 minutes until thickened.
  4. Prepare tortillas and microwave rice as instructed.
  5. Assemble by placing rice, beef mixture, fresh salsa, black beans, and grated mozzarella onto warmed tortillas. Roll tightly to enclose fillings.
