  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup (120g) chow mein noodles
  • 1 1/2 cups (250g) milk chocolate chips
  • 1 tbsp coconut oil or vegetable shortening (optional)
  • 1/2 cup (100g) milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Optional: Colorful sprinkles or nonpareils

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, cocoa powder, and salt.
  3. In a larger bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the vanilla extract and egg, mixing until smooth.
  5. Gradually add the dry mixture to the wet ingredients until a soft dough forms.
  6. Scoop about 1 tablespoon of dough and flatten each into a 2-inch disk. Place them on the baking sheet.
  7. Bake for 8–10 minutes until edges are set. Allow them to cool completely.
  8. Microwave the milk chocolate chips in 30-second increments until smooth.
  9. If needed, add coconut oil or shortening to thin out the chocolate.
  10. Place chow mein noodles in a large bowl and pour melted chocolate over them; gently toss until coated.
  11. Scoop about 2 tablespoons of chocolate-coated noodles onto each cooled cookie base.
  12. Shape noodles into a circular nest with a hollow center for filling.
  13. Let nests sit at room temperature for about 15 minutes.
  14. Microwave milk or dark chocolate chips with coconut oil/butter in a small bowl until smooth.
  15. Spoon melted chocolate into each nest's hollow center, filling halfway.
  16. Gently tap cookies on counter to smooth out chocolate.
  17. Let cool completely; refrigerate for faster setting if desired.
  18. Once hardened, gently press pastel candy eggs into each nest's center. Optionally sprinkle colorful decorations around edges for added festivity!
