  • lbs shrimp (peeled, deveined, and rinsed)
  • 1 tbs butter
  • 1 tbs olive oil
  • 1 small onion (diced)
  • 5 cloves garlic (minced)
  • ½ cup white apple vinegar
  • 5 oz sun-dried tomatoes (drained and sliced)
  • 1⅓ cups half-and-half
  • Salt and pepper (to taste)
  • ½ cup grated parmesan cheese
  • Large handful baby spinach

Instructions

  1. Pat the shrimp dry and season with salt, paprika, and Italian herbs.
  2. In a large skillet over medium-high heat, melt butter with olive oil. Add shrimp and cook for 1-2 minutes on each side until pink; transfer to a plate.
  3. In the same skillet, sauté diced onion for 3-4 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  4. Pour in white apple vinegar and add sun-dried tomatoes; sauté for another minute.
  5. Stir in half-and-half, salt, pepper, and parmesan cheese; let simmer until slightly thickened.
  6. Add baby spinach to the sauce until wilted, then fold in cooked shrimp to coat well.
