  • 1 fresh pineapple, diced (reserve 0.5 cup for garnish)
  • 1 tablespoon sesame oil
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup white rice
  • 0.5 cup coconut milk (optional, for cooking rice)
  • 0.25 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 0.5 teaspoon red chili flakes (optional)
  • 2 lime wedges
  • 0.25 cup cashews (optional)

Instructions

  1. Marinate the chicken by mixing half of the soy sauce, rice vinegar, brown sugar, ginger, and minced garlic in a bowl. Add diced chicken and let it marinate for at least 20 minutes.
  2. Cook the white rice according to package instructions; substitute half of the water with coconut milk for extra creaminess if desired.
  3. In a small bowl, whisk together remaining soy sauce, rice vinegar, brown sugar, sesame oil, and cornstarch to create a glaze.
  4. Heat oil in a large skillet over medium-high heat. Sear marinated chicken until golden brown; remove from pan.
  5. Sauté bell pepper and onion until softened. Return chicken to the skillet and add the glaze; cook until sauce thickens.
  6. Serve over fluffy rice garnished with reserved pineapple chunks and optional toppings like cilantro and lime wedges.
