  • 18 to 20 jumbo pasta shells
  • 5 ounces fresh spinach
  • 2 cups ricotta cheese
  • 1/4 cup grated pecorino cheese
  • 2 cloves garlic (grated)
  • 2 cups marinara sauce
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook pasta shells until al dente. Drain and rinse under cold water.
  3. In a mixing bowl, combine spinach, ricotta, pecorino, garlic, oregano, lemon zest, red pepper flakes, salt, and pepper.
  4. Stuff each shell with the filling mixture and place in a baking dish.
  5. Pour marinara sauce over the shells and sprinkle with extra pecorino if desired.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for another 10 minutes until bubbly.
