  • 2 tablespoons cherry juice (optional)
  • 1/2 cup heavy cream
  • 4 ounces dark or semi-sweet chocolate, chopped
  • 1 tablespoon butter
  • Whipped cream (for piping)
  • Whole cherries
  • Chocolate curls or shavings

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Beat eggs and sugar until light and fluffy; mix in vanilla.
  3. Sift together flour, cocoa powder, baking powder, and salt; fold into egg mixture.
  4. Spread batter evenly in the pan and bake until springy.
  5. Roll the warm cake in a powdered sugar-dusted towel; let cool completely.
