  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 Tablespoons chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a heavy-bottomed skillet over medium-high heat, combine olive oil and butter. Season sirloin cubes with salt and pepper; brown on all sides for about 6-8 minutes.
  3. Add chopped onions and carrots; cook until softened (4-5 minutes). Sprinkle flour over the mixture and stir for 1-2 minutes.
  4. Pour in apple cider and beef broth; bring to a boil before transferring to an oven-safe baking dish. Cover with foil and bake for 1 – 1½ hours.
  5. While the stew bakes, boil potatoes in salted water until tender. Drain, return to pot, and mash with milk, sour cream, cheese, and chives until smooth.
  6. Serve mashed potatoes topped with hot apple cider stew.
