  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt
  • Optional: Fresh berries for garnish

Instructions

  1. Preheat oven to 350°F and prepare a kettle of boiling water.
  2. In a saucepan, combine sugar and water; bring to a boil until golden brown, then pour into a round non-stick cake pan.
  3. Blend condensed milk, evaporated milk, heavy cream, vanilla, eggs, and salt until smooth; strain into the cake pan over caramel.
  4. Cover with foil and place in a roasting pan filled with hot water halfway up the sides.
  5. Bake for 70-80 minutes until slightly jiggly in the center; cool before refrigerating overnight.
  6. To serve, invert onto a platter and garnish as desired.
