  • 2 cloves garlic
  • 3 cups chicken broth
  • 2 cans great northern beans
  • 2 cans diced green chilies
  • 1 can whole kernel corn
  • 1/2 cup reduced-fat cream cheese
  • 1/4 cup half-and-half cream
  • Salt to taste
  • Ground black pepper to taste
  • Ground cumin to taste
  • Dried oregano to taste
  • Chili powder to taste
  • Cayenne pepper to taste
  • Sliced jalapeños for topping
  • Sliced avocados for topping
  • Dollop of sour cream for topping
  • Chopped fresh cilantro for garnish
  • Tortilla strips for garnish
  • Grated monterey jack or mexican cheese for garnish

Instructions

  1. Chop the onion and garlic, rinse the beans, and trim excess fat from the chicken.
  2. In the slow cooker, layer the chicken at the bottom. Add onion and garlic followed by chicken broth, beans, green chilies, corn, salt, pepper, cumin, oregano, chili powder, and cayenne.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Shred cooked chicken with forks directly in the pot. Stir well to combine.
  5. Mix in softened cream cheese and half-and-half until creamy.
  6. Serve hot with your choice of toppings like sliced jalapeños or avocado.
