  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • ½ cup Greek yogurt (full-fat)
  • ½ cucumber, finely grated and drained
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • Fresh parsley or cilantro, chopped

Instructions

  1. Marinate the Chicken: Whisk together olive oil, garlic, lemon juice, oregano, smoked paprika, cumin, salt, and pepper in a bowl. Add chicken thighs and coat well. Cover and refrigerate for at least 30 minutes.
  2. Make Tzatziki Sauce: Grate cucumber and squeeze out moisture. Mix with Greek yogurt, dill, garlic, lemon juice, salt, and pepper in a bowl. Refrigerate until ready.
  3. Grill Chicken: Heat grill pan or outdoor grill over medium-high heat. Grill chicken thighs for about 5–6 minutes per side until cooked through.
  4. Warm Tortillas: Heat tortillas in a skillet or wrap in foil to keep warm.
  5. Assemble Tacos: Slice chicken and place on tortillas. Top with tzatziki sauce, cherry tomatoes, red onions, and herbs.
