  • 2 medium oranges (boiled and pureed)
  • 150 g almond meal
  • 100 g finely ground pistachios
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 170°C (340°F). Line the base of a 23 cm springform pan with parchment paper and grease the sides.
  2. Boil whole oranges in water for about 60 minutes. Drain, cool, remove seeds, and puree until smooth.
  3. In a mixing bowl, whisk together eggs and granulated sugar until pale. Stir in orange puree.
  4. In another bowl, mix almond meal, ground pistachios, baking powder, and salt. Fold into the wet mixture until just combined.
  5. Pour batter into the prepared springform pan and smooth the top. Bake for 50–60 minutes or until a skewer comes out clean.
  6. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
