  • 1 lb boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups instant rice (white or brown)
  • 1 envelope onion soup mix
  • Optional: shredded cheddar cheese
  • Optional: frozen mixed vegetables

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch casserole dish.
  2. In a large mixing bowl, combine both cream soups and water with the uncooked instant rice; mix well.
  3. Pour the mixture into the greased casserole dish evenly.
  4. If desired, stir in frozen mixed vegetables or shredded cheese.
  5. Place raw chicken breasts on top of the rice mixture and sprinkle with onion soup mix.
  6. Cover tightly with aluminum foil and bake for 60 minutes without lifting the foil.
  7. After baking, check that the chicken is fully cooked (165°F/75°C) and let rest before serving.
