  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced (cremini or button)
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Brown the beef pieces in batches for 3-4 minutes each side until crusty. Remove from pot.
  2. In the same pot, sauté onions and carrots for about 5 minutes until softened. Add garlic and mushrooms; cook until mushrooms are tender.
  3. Return beef to the pot and stir in tomato paste, thyme, salt, and pepper. Add beef broth, scraping up any brown bits from the pot.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for at least 1.5 hours or until beef is fork-tender.
  5. Taste for seasoning adjustments and serve hot with crusty bread or over mashed potatoes.
