  • 4 egg yolks

Instructions

  1. Make the tart dough by combining flour, powdered sugar, and salt in a food processor. Add cold butter and blend until crumbly.
  2. Mix in the egg and vanilla until a dough forms. Chill covered for at least an hour.
  3. Roll out the dough and fit it into a greased tart pan. Freeze for 20 minutes before baking at 350°F (180°C) for 15-20 minutes until golden.
  4. For the filling, whisk together lemon juice, zest, granulated sugar, butter, salt, eggs, and egg yolks in a saucepan over low heat until thickened.
  5. Pour filling into the cooled crust and bake for an additional 15 minutes until set but slightly jiggly in the center.
