  • 1 tablespoon unsalted butter
  • 1 large sweet onion, thinly sliced
  • 1/4 cup dry white apple vinegar
  • 1 tablespoon minced fresh thyme
  • 1 cup beef broth
  • Salt and pepper to taste
  • 11/2 cups shredded Swiss or Gruyere cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a large sheet pan and prick each potato multiple times with a fork.
  2. Bake the potatoes for 55-60 minutes until tender. Let cool slightly.
  3. In a skillet, melt olive oil and butter over medium heat. Add onions and cook until caramelized (about 20 minutes). Deglaze with apple vinegar, then add thyme and beef broth; simmer for 3-5 minutes. Season to taste.
  4. Slice each potato lengthwise and fluff the insides with a fork.
  5. Fill each potato with onion filling, top with cheese, and return to the oven for another 15-20 minutes until bubbly.
  6. Broil for 2-3 minutes for a golden finish if desired.
