  • 2 lbs Yukon Gold or Russet potatoes, thinly sliced
  • 2 large onions, thinly sliced
  • 2 tbsp butter or olive oil
  • 1 packet onion soup mix or 1 cup condensed French onion soup
  • 1 cup beef or vegetable broth
  • ½ cup sour cream
  • 1 cup shredded Gruyère cheese (or a mix of cheddar, Swiss, mozzarella)
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions by cooking them in a skillet with butter over medium heat until golden brown (20–25 minutes). Deglaze with broth or fruit juice if necessary.
  2. Slice the potatoes evenly and pat dry.
  3. In a mixing bowl, combine sour cream, onion soup mix (or condensed soup), broth, and half the cheese. Stir in caramelized onions.
  4. In a greased baking dish, layer half of the potatoes followed by half of the onion mixture. Repeat with remaining ingredients and top with remaining cheese.
  5. Cover with foil and bake at 375°F for 30 minutes. Remove foil and continue baking for another 15–20 minutes until golden brown.
  6. Garnish with fresh herbs or crispy onions before serving.
