  • 12 cloves garlic, roughly chopped
  • 1/4 cup diced green onions
  • 4 cups day-old cooked jasmine rice
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • pinch of salt

Instructions

  1. Heat neutral oil in a large wok or pan over medium heat. Add chopped garlic and sauté until golden.
  2. Mix in diced green onions and cook for about one minute until fragrant.
  3. Stir in day-old rice along with soy sauce, rice vinegar, sesame oil, and salt. Combine well and increase heat to high.
  4. Fry the mixture for 3-5 minutes, stirring occasionally until crispy and browned. Taste and adjust seasoning if needed.
  5. Serve warm, garnished with reserved garlic and green onion or fresh herbs.
