  • 8 chicken drumsticks
  • 3 tbsp olive oil (divided)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper to taste
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine 3 tbsp olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper to create the marinade. Toss the chicken drumsticks in the marinade until well coated.
  3. In another bowl, mix cubed potatoes, chopped carrots, bell pepper, 2 tbsp olive oil, salt, and pepper until evenly coated.
  4. Spread the veggies on a baking tray and nestle the marinated chicken among them.
  5. Roast everything together for about 40-45 minutes, turning halfway through until chicken is golden brown and cooked through.
  6. Garnish with fresh parsley before serving.
