  • 6 boneless, skinless chicken breasts
  • 1/2 cup olive oil
  • 3 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon garlic powder
  • 2 teaspoons Spike seasoning (or similar)
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. Trim excess fat from chicken breasts and ensure even thickness by trimming thicker pieces.
  2. Cut shallow slits crosswise in each chicken breast for better marinade absorption.
  3. In a mixing bowl, whisk together olive oil, lemon juice, garlic powder, Spike seasoning, dried basil, oregano, onion powder, sage, and black pepper.
  4. Place chicken in a Ziploc bag or container and pour marinade over it. Seal and refrigerate for at least 5-8 hours.
  5. Preheat grill to medium-high heat; drain the marinade from chicken before grilling.
  6. Grill each breast for about 3-4 minutes per side until internal temperature reaches 165°F (74°C).
