  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup mushrooms, finely chopped (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey slices
  • 1 sheet puff pastry
  • Salt and pepper to taste

Instructions

  1. Season the beef filet with salt and pepper. Heat olive oil in a skillet over high heat and sear the beef for 1–2 minutes on each side until browned. Remove from heat and brush with Dijon mustard.
  2. Finely chop the mushrooms and sauté in the same skillet with butter, garlic, and thyme until moisture evaporates. Let cool fully.
  3. Lay turkey slices on plastic wrap, spread cooled mushroom mixture evenly over them, place the seared beef on top, and roll tightly. Chill for 15 minutes.
  4. Roll out puff pastry to encase the beef completely. Seal edges with egg wash and brush the top for color.
  5. Preheat oven to 400°F (200°C) and bake for 15–20 minutes until golden brown. Let rest for 5 minutes before slicing.
