  • 2 cups lukewarm water
  • 2 teaspoons granulated sugar
  • 1 and 1/2 teaspoons instant yeast
  • 4 cups all-purpose flour
  • 1 and 1/2 teaspoons salt
  • 1/4 cup olive oil
  • 14 oz feta cheese

Instructions

  1. Make the starter by mixing water, sugar, yeast, and flour in a bowl; let it sit until puffy (8-10 minutes).
  2. In another bowl, whisk together remaining flour and salt. Add to the yeast mixture with olive oil; knead until smooth (about 10 minutes).
  3. Place dough in an oiled bowl, cover, and let rise until doubled (1.5 – 2 hours).
  4. Shape the dough into a circle, fill with crumbled feta, fold over to cover.
  5. Transfer to a baking tray lined with semolina flour; let rise again (30 minutes).
  6. Preheat the oven to 425°F (220°C). Make indentations on top of the dough, brush with melted butter and cream, sprinkle sesame seeds if desired.
  7. Bake for 25-30 minutes until golden brown; cool for 15 minutes before serving.
