  • 6 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta (or rice)
  • Juice and zest of 2 large lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, add chicken breasts and cover with chicken broth. Bring to a gentle boil.
  2. Reduce heat and simmer until chicken is cooked through (15-20 minutes). Remove chicken and allow to cool.
  3. In another pot, heat olive oil over medium heat; sauté onion, carrots, and celery until softened (5-7 minutes).
  4. Add minced garlic and sauté for an additional minute.
  5. Shred the cooled chicken and return it to the pot with vegetables.
  6. Stir in orzo (or rice), more broth, lemon juice, zest, oregano, thyme, salt, and pepper.
  7. Allow to simmer for about 10-12 minutes or until pasta is fully cooked.
