  • 2 boneless, skinless chicken breasts
  • Salt, pepper, Italian seasoning
  • 1 tablespoon olive oil
  • ¼ cup basil pesto
  • 4 slices fresh mozzarella cheese
  • 4 slices crusty bread (sourdough or ciabatta)
  • Butter or olive oil for toasting bread
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a grill pan over medium heat and grill chicken for 6–7 minutes on each side until fully cooked. Let rest before slicing.
  3. Spread basil pesto on one side of each slice of bread. Layer sliced chicken and mozzarella on two slices (pesto-side up), then top with remaining bread slices (pesto-side down).
  4. Brush the outsides of sandwiches with butter or olive oil. Grill in a skillet or panini press over medium heat for about 3–4 minutes per side until golden brown and cheese is melted.
  5. Slice sandwiches in half and serve warm.
