  • 4 skinless boneless chicken breasts
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 2 green onions (green parts only), finely chopped
  • 23 cloves garlic, finely chopped
  • 1 red chili, deseeded and finely chopped
  • 1/3 cup olive oil
  • 1 tbsp red or white apple vinegar
  • Kosher salt and ground pepper to taste

Instructions

  1. Prepare the chimichurri sauce by combining parsley, cilantro, green onions, garlic, and red chili in a mixing bowl. Add olive oil, vinegar, oregano, basil, salt, and pepper. Mix well and let rest for 10 minutes.
  2. Marinate the chicken by pouring one-third of the chimichurri sauce over the chicken breasts. Coat well and marinate for 15-20 minutes.
  3. Preheat your grill to medium-high heat.
  4. Grill the marinated chicken for about 6-8 minutes on each side until cooked through (internal temperature should reach 165°F).
  5. Serve the grilled chicken on a platter with reserved chimichurri sauce drizzled on top.
