  • Four 8-ounce portions of skinned and boned Mahi Mahi
  • ½ fresh pineapple (peeled, cored, and sliced)
  • 1 medium red bell pepper (diced)
  • ½ medium red onion (diced)
  • ½ bunch cilantro (chopped)
  • 1 medium serrano pepper (chopped)
  • Salt and pepper to taste
  • Olive oil
  • Ground cumin
  • Fresh lemon juice

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, combine diced pineapple, red bell pepper, red onion, cilantro, serrano pepper, rice apple vinegar, olive oil, lemon juice, cumin, salt, and pepper. Mix well and set aside.
  3. Season both sides of each Mahi Mahi portion with salt and pepper. Brush melted butter over the fish.
