  • ½ cup extra-virgin olive oil
  • ⅔ cup chopped cilantro
  • Zest from 1 large orange
  • Juice from 2 large oranges (about ½ cup)
  • Juice from 4 limes (about ⅓ cup)
  • 3 tablespoons chopped fresh mint leaves
  • 6 cloves garlic (minced)
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 1½ teaspoons ground cumin
  • 1 teaspoon Kosher salt
  • 1 teaspoon fresh ground black pepper
  • 2 1-pound beef tenderloins (silver skin removed)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Whisk together olive oil, cilantro, orange zest, orange juice, lime juice, mint, garlic, oregano, cumin, salt, and pepper in a mixing bowl.
  2. Place beef tenderloins in a resealable bag or dish and pour marinade over them. Seal and refrigerate for at least 4 hours or overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove beef from marinade and discard the leftover marinade. Grill tenderloins for 5-7 minutes per side until medium-rare.
  5. Let the beef rest for 10 minutes before slicing. Garnish with chopped parsley before serving.
